The Blade - Using highest quality Japanese steel that allows for easy blade maintenance and rapid sharpening for a razor-sharp edge. One-piece high-carbon, stain-resistant Japanese steel. The rigid strong blade is 2.5mm thick and keeps its factory sharpness incredibly well (see below how to maintain factory sharpness)

Sharpening maintenance - Either Brod & Taylor Professional or Classic Knife Sharpener has the ability to sharpen this serrated blade. Just a couple of pulls through the B & T Sharpener (using the serrated blade method) every 2-3 months will keep the blade factory sharp
Care - Please hand wash the knife for blade edge and surface care. Store in a knife block or use the optional Mercer 12" Knife Guard which is a strong durable hard polystyrene sleeve that you slide the knife into from the top of the sleeve. It's never great to put the knife in an open draw for storage, or leave the knife in the sink.
