Tangy, aromatic organic certified Limes harvesting now. These are harvested from a few of our lovely Tahitian Lime trees interspersed amongst our Yuzu. We are picking with that typical green Lime colour and just starting to show some ripening gold colour.
Did you know that in temperate countries (like NZ) as the citrus fruit ripens, the markedly cooler evening temperatures induce the development of the "ripening" colour in the peel. In the case of Limes. they'll go from green to yellow as they ripen. What happens in tropical countries (like Fiji, Rarotonga) you'll see their oranges look green even though they are full size and ripe. Same for their Limes, they'll stay green right through to ripeness. This is because these tropical countries don't have any cold temperature changes to induce the development of the "ripening" colour.
Order our Limes in 500g units, as you probably don't need a whole kg of them at one time. We'll be harvesting Limes for 3-4 weeks or more.
Organic certified Limes are not an easy to obtain citrus fruit.
