To ripen green Ume fruit for making Umeboshi or Ume syrup, just place the fruit in a wide bowl or tray and leave at room temperature for 3-4 days covered with a tea towel. They will ripen up quite quickly. Check daily and you can choose how ripe you want the Ume to be. As they ripen you will be able to smell the aroma coming off the ripening ume. For umeboshi the fruit to salt ratio is 15%. So 1,000g ume to 150g salt.
