Tangy, aromatic organic certified tree ripened Limes harvesting now. These are harvested from a few of our lovely Tahitian Lime trees interspersed amongst our Yuzu trees.
These Limes are tree ripened, have a predominately light greenish to turning yellow colour, and are very aromatic and juicy. So fresh!
Did you know that in temperate countries (like NZ) as the citrus fruit ripens, the markedly cooler evening temperatures induce the development of the "ripening" colour in the peel. In the case of Limes. they'll go from green to yellow as they ripen. What happens in tropical countries where there isnt a marked difference between day and night temperatures (like Fiji, Rarotonga) you'll see their oranges look green even though they are full size and ripe. Same for their Limes, they'll stay green right through to ripeness. This is because these tropical countries don't have any cold temperature changes to induce the development of the "ripening" colour.
